Creamy Tuscan Salmon
One pan, twenty minutes, restaurant-good - seared salmon in a creamy sun-dried tomato sauce.

Ingredients
- 2 salmon fillets
- Salt, black pepper, and Italian seasoning, to taste
- 1-2 tbsp olive oil
- 1-2 tsp minced garlic
- ½ cup sun-dried tomatoes, julienned
- 1 cup heavy cream
- ⅓ cup grated parmesan
- 2 cups baby spinach
- Fresh parsley, to garnish
Method
- Season the salmon on both sides with salt, pepper, and Italian seasoning.
- Heat the oil over medium-high; sear the salmon, skin-side down first, ~3-4 min a side until golden and just cooked. Set aside.
- In the same pan, cook the garlic and sun-dried tomatoes ~30 seconds until fragrant.
- Pour in the cream and stir with the pan drippings.
- Stir in the parmesan; simmer a few minutes until it thickens.
- Add the spinach and stir until wilted.
- Nestle the salmon back in, spooning sauce over each fillet.
- Garnish with parsley and serve right away.

Get the pan good and hot before the salmon goes in - that's what gives you a golden crust instead of a gray steam.
