Creamy Tuscan Salmon

One pan, twenty minutes, restaurant-good - seared salmon in a creamy sun-dried tomato sauce.

Method

  1. Season the salmon on both sides with salt, pepper, and Italian seasoning.
  2. Heat the oil over medium-high; sear the salmon, skin-side down first, ~3-4 min a side until golden and just cooked. Set aside.
  3. In the same pan, cook the garlic and sun-dried tomatoes ~30 seconds until fragrant.
  4. Pour in the cream and stir with the pan drippings.
  5. Stir in the parmesan; simmer a few minutes until it thickens.
  6. Add the spinach and stir until wilted.
  7. Nestle the salmon back in, spooning sauce over each fillet.
  8. Garnish with parsley and serve right away.
Pearl's Tip

Get the pan good and hot before the salmon goes in - that's what gives you a golden crust instead of a gray steam.
