How to make it

Season the salmon on both sides with salt, pepper, and Italian seasoning.

Heat the oil over medium-high; sear the salmon, skin-side down first, ~3-4 min a side until golden and just cooked. Set aside.

In the same pan, cook the garlic and sun-dried tomatoes ~30 seconds until fragrant.

Pour in the cream and stir with the pan drippings.

Stir in the parmesan; simmer a few minutes until it thickens.

Add the spinach and stir until wilted.

Nestle the salmon back in, spooning sauce over each fillet.
